Bayside Fauna (Alc 3.2%). 375mL can. A beery experiment, created over 12 months ago with the Wild Yeast floating on the breeze in the Bayside. We took our Bayside Pale recipe, but kept the boil free of nearly all hops (allowing just enough bittering to be classified as beer) & then opened up the finished wort to the breeze wafting through the brewery until we saw some fermentation activity. The beer was then closed off to the outside environment & the wild yeast left to do it's thing... A total gamble, as the local wild yeast could have easily have created something undrinkable. But the God Bacchus must have been smiling on us, as the beer is delicious & we were delighted to bring you the results... This is from a keg just discovered in our keg room, that's been aging a further 12 months & tasing amazing... VERY LIMITED.
